Jorge Vides founded Finca La Bolsa in La Libertad, Huehuetenango in 1958. Since then, the farm has enjoyed many accolades both for the quality of their coffee and for their social programs. La Bolsa has performed well in Guatemala’s Cup of Excellence over the years and In 1984, Jorge was named Distinguished Coffee Grower of the Year by Anacafe, Guatemala’s Coffee Organization . Years ago, Jorge recognized the dire need for educational opportunities for the children of the harvesters that he employed in the region. So, with the help of the Ministry of Education, he established a school in addition to a day care facility on the farm property. Since we have been buying coffee from La Bolsa, we have given back some proceeds from the sale of their coffee to support this school and to buy school supplies for the students. While Bird Rock has been buying coffee from La Bolsa for a few years now, this is the first year we have offered their Cascara. CASCARA TEA INSTRUCTIONS HOT 1) Put 18 grams of cascara (0.6 oz., or a heaping Tbsp.) into a sachet or tea strainer. 2) Add 300 grams (10.5 oz.) of 200°F water. 3) Steep 4-5 minutes. 4) Strain and enjoy! COLD 1) Add 100 grams (3.5 oz.) cascara to 1 liter cold water. 2) Let brew for 24 hours. 3) Strain, pour over ice, and enjoy!
